Cookbooks - The Frugal Gourmet Cooks with Wine






This cookbook is an oldie-but-goodie, but it's nonetheless a great book of basic techniques along with some challenging recipes.

The late Jeff Smith, the "Frugal Gourmet"  had an interesting career, filled with both success and scandal.  This was his second or third book, and was published at a time when he was at the top of his game on his public-television show. 

I was initially drawn to this book because of the title.  New Orleans cooking is about sauces, and many sauces include wine.  Using wine in cooking is a great way to reduce the amount of oil and salt in various dishes.  Smith explains various techniques and presents a wide range of recipes, including a New Orleans chapter.

That's probably my second most used cookbook after Fannie Farmer.

Is your Fannie Farmer cookbook old or new? The one I use is from the 30's (Boston Cooking School)

I have two: a "Boston" copy from 1941 and a 1980s edition. I use them both.

I have quite a few of his books, and used many of the recipes. His book "The Frugal Gourmet Cooks American" has a section on the Pennsylvanian Germans (Pennsylvanis Dutch - that's part of my ancestry). When I bought it, I had a real fit because most of the recipes are verbatim from an old cookbook that I got from my grandmother! I was so ticked, I wrote to the publisher. Of course, I never heard back. *grumble*

that's one of the criticisms that Smith received later in his career, that he cut a lot of corners and relied on assistants way too much.

Also, I used to stay up late at night just to watch The Galloping Gourmet (Graham Kerr) on the Food Network.

Oh, I used to love his show! It ran on WTTW (PBS, I guess) here in Chicago.
